Market Brunch



On a recent trip to the North Carolina mountains we ate at The Fork and Spoon a fab restaurant in Spruce pine. I ate the first evening with my friends and the second day I took hubby and the kids there for brunch, hubby still mentions how good the food was. I had an open sandwich with pulled pork seasonal vegetables and an egg. Fun modern Southern this was a brunch I made inspired by that. I used lovely bacon from the farmers market but it would be just as good without it.



Ingredients:

for 2

  • 4 slices of bacon
  • 2 handfuls of fresh sugar snap peas
  • a bunch of Swiss chard
  • a slice of toast
  • 2 eggs
  • a little butter
  • 2 cloves of garlic
Method:

  1. cook the bacon in a frying pan and keep ready
  2. sauté the garlic in a little butter add the Swiss chard and let it reduce down with a lid then add sugar snap peas for 2 minutes so they remain crisp.
  3. toast some bread add the bacon then the veggies and top with an egg I love mine with runny yolk
 
 
We are in the UK at the moment making our way around the country visiting friends and family. We have seen a few weather changes the first few days we enjoyed glorious sunshine and trips to pretty National Trust properties and gardens with my hubbys sweet family. Then cooler Autumn like weather in Scotland. We visited the gorgeous Isle of Arran with my friends and my Dad meet us there. A stunning wee Island like Scotland in miniature more posts to come. I didn't bring a computer and hop onto wifi as able be sure to see facebook and vine for pictures, video :-)
We are now in Scotland enjoyed time with my brother and his sweet Mrs. and seeing my parents then a family wedding back in Shopshire and home.
