I made crumpets for the first time recently if you have never had them, oh you are missing out, they are a British staple and often toasted and eaten with butter and sugar or Jam I adored them as a kid.

Fiesta 2011 Winston Salem


We had a lovely day today as a family in the morning we took our daughter to ride Thomas at the NC transportation museum, she enjoyed it although wasn't happy that the whole train wasn't blue :). 

Then on the way home we called of downtown to check out the annual Fiesta complete with wonderful Mexican dancing and great food.

Red Snapper with Mango Salsa



I got a lovely piece of red snapper on sale in whole foods recently I got to craving it after Michael on the  chow and chatter facebook page said it was his favorite fish. I also wanted something really nice to cook on our new cast iron grill pan ;-) red snapper can be endangered depending on where it is fished so be sure to ask.  I am also very keen on buying sustainable fish and was impressed with @WholeFoodsPR on twitter for sending me useful links on their polices another great resource is The Monterey Bay aquarium seafood watch guide they also have an iphone and android app. I simply pan fried the fish and served it with a mango salsa and cous cous it was delicious.

Cake to Celebrate :-)


I made this Victoria sandwich a couple of weeks ago for a late birthday cake for hubby and Jasmine, since the little guy hadn't arrived I decided why not. In fact it was enjoyed with my brother in law and sister in law visiting from Nebraska it must have been good as it was polished of in one day he he, as a baker this makes you very happy.

Our Little Prince and a Frozen Vanilla Delight

Also big news our little Prince arrived this Tuesday at 9.30 am after a long labor and then a c section, but its all good he is here and healthy. Mum and Dad are here to help and we extended my Mum in Law's flight a couple of days to see the little guy. We are having a birthday party for Jasmine tomorrow making a cake and little frogs in ponds, you may recall Maureen's guest post :-)

Halibut Fish Stew over Polenta


I made this simple fish stew the other day, it is basically the same recipe as Halibut with basil over polenta, except I chopped the fish up added more vegetables to stretch it a bit. Baby update - as of now I haven't gone into labor naturally its a week and 1/2 late and have a c section scheduled for tuesday so I will happily introduce our little guy next week :-)
