Roasted Cabbage with a Chive and Yogurt Dressing


Cabbage is something I rarely think to use, not sure why its a tasty vegetable since I adore roasted vegetables I thought I would give roasting it a try. This actually turned out really well. 

ROASTED CABBAGE WITH A CHIVE AND YOGURT DRESSING 


Roast a couple of thick slices of whole cabbage at 425 for 30 min with olive oil, salt and pepper and cayenne pepper, salt and pepper to taste.


Then mix Greek yogurt, with salt and freshly chopped chives and eat with the cabbage.
