Vegetable and Lentil Coconut Curry



This is a really simple recipe and features canned lentils, these are fun, a great source of protein and fiber and because they are canned don't need soaking or pressure cooking. Also love the flavors of Thai curry in this dish. 



Thai green curry with lentils and veggies

Ingredients -
  • Any veggies on hand, I used carrot, potato, broccoli, snap peas, peashoots,
  • One can of lentils
  • One can of coconut milk
  • 1/3 jar of green curry paste 
  • 1/2 teaspoon ginger garlic paste
  • 1/2 an onion
Method 

1. Sauté onion and ginger/garlic paste for 5 min, add the veggie and stir fry with lid 10 min add a little water as needed 
2. When the vegetables are soft add the coconut milk with the paste blended and stir 
3. Then add the lentils and simmer for 5 min

  1. great recipe to try when I want to empty out the fridge. I have some dried lentils maybe can use them instead
