Tuscan White Bean Stew





Just wanted to share a simple and flavorful soup that's nourishing and perfect for any season!


Ingredients 

- two diced celery stalks
- 2 cans of white beans
- 2 cloves of garlic, minced 
- 1/2 cup of kale and 1/2 cup Swiss chard or spinach chopped 
- 1/2 a yellow onion chopped 
- 3 carrots chopped 
- One box of vegetable or chicken stock 
- A pinch of red chili flakes
- 2 tablespoons of tomato paste 

Method 

1. Sauté onion, garlic, and celery for 5-7 min, then add chili flakes 
2. Then add carrots, greens, and tomato paste and reduce for about 7-10 min
3. Add the stock and two cans of white beans with salt to taste.
